Cream Cheese Mints

Makes 6 to 8 dozen mints 
   Ingredients    
4 ounces cream cheese
4 teaspoons butter, softened
4 cups confectioners' sugar
3 drops peppermint oil
1 or two drops red or green food coloring (optional)

   Directions
       In a large bowl, combine cream cheese, butter or margarine, and confectioner's sugar. Mix in peppermint oil, adding additional drops to taste. Color with food coloring paste if desired.
       Roll mixture into small balls, and place on waxed paper. Press into molds or flatten with a fork dipped in confectioners' sugar.  Balls can be left round and rolled in granulated sugar. Let dry for about 2 hours on waxed paper, and then freeze or refrigerate.
Microwave Oven Peanut Brittle


Ingredients    
          1 1/2 cups peanuts
          1 cup white sugar
          1/2 cup light corn syrup
          1 pinch salt (optional)
          1 tablespoon butter
          1 teaspoon vanilla extract
          1 teaspoon baking soda

Directions
          Grease a jelly roll pan or a 13 X 9" pan.
          Mix peanuts, sugar, corn syrup, and salt in a glass mixing bowl. Cook 6-7 minutes on high (700 W); mixture should be bubbly and peanuts browned. Quickly stir in butter and vanilla; cook another 2-3 minutes. Add baking soda and stir quickly just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool thoroughly - at least 15 minutes. Break into pieces and store in airtight container.

EASY AMARETTO TRUFFLES

8 oz. Semi-sweet chocolate
1 oz. Unsweetened chocolate
1/2 cup Whipping cream
1/4 cup Sweet butter (unsalted)
3 Tbls. Amaretto**
Cocoa powder, powdered sugar, and/or finely ground nuts (Any or all of these may be used.)

Melt chocolates, cream, and butter in a heavy saucepan on low heat, stirring occasionally.  Add Amaretto.  Cool till you can refrigerate and chill 2 hours, until mixture is firm.  Using a chilled melon baller, quickly form chocolate mixture into ¾ - 1 inch balls. Refrigerate again. When thoroughly chilled, roll balls in cocoa powder. Store in an airtight container.

Makes about 32 truffles. Per truffle:  ABOUT 70 calories

**Any liqueur may be substituted.  Frangelico, Kahlua, or even dark rum are good choices.
