EASY AMARETTO TRUFFLES
8 oz. Semi-sweet chocolate 1 oz. Unsweetened chocolate 1/2 cup Whipping cream 1/4 cup Sweet butter (unsalted) 3 Tbls. Amaretto** Cocoa powder, powdered sugar, and/or finely ground nuts (Any or all of these may be used.)
Melt chocolates, cream, and butter in a heavy saucepan on low heat, stirring occasionally. Add Amaretto. Cool till you can refrigerate and chill 2 hours, until mixture is firm. Using a chilled melon baller, quickly form chocolate mixture into ¾ - 1 inch balls. Refrigerate again. When thoroughly chilled, roll balls in cocoa powder. Store in an airtight container.

**Any liqueur may be substituted. Frangelico, Kahlua, or even dark rum are good choices. |
